Recipe for Pumpkin Bread and Muffins

Ingredients

1 3/4 cup (1 15 oz. can) pureed pumpkin, 1 1/2 cup brown sugar, 1/2 cup (1 stick) butter, softened, 3 eggs, 3-4 cups all-purpose unbleached flour, two tablespoons baking powder, 1 teaspoon ground cinnamon, 1/2 teaspoon salt, 1/2 teaspoon ground nutmeg, 2 cups chopped walnuts or chocolate chips,

Directions:

Pre-heat the oven to 350 degrees Fahrenheit. Set up muffin tins or mini bread pans by simply lightly coating them with cooking spray or butter.

In a huge mixing container, stir simultaneously pumpkin, brown sugar, butter, and eggs. Stir until creamy. In another mixing bowl, stir together all the dry ingredients with the exception of the nuts or chocolate chips.

Take out 3 cups from the mixed dry ingredients and then mix into the wet mixture. Bring an additional cup or more of the dry ingredients as desired to attain the proper texture. Batter has to be moist, but dense enough for a spoon to withstand it.

Add nuts or chocolate chips and blend consistently.

Pour or scoop the batter into your greased muffin tins or bread pans. Put on the middle rack and then bake in preheated oven right until a knife pierced in the center of the loaf comes out spotless and dry. If you are baking pumpkin muffins, bake them for around 20-25 minutes. For smaller loaves, bake for 25 to 30 minutes, and with huge sized bread, bake in between 50 minutes and 1 hour.
